Unstuffed Cabbage Soup

Unstuffed Cabbage Soup
  • 1 Tbsp Olive oil
  • 2 lbs ground beef
  • 1 lrg onion chopped
  • 1 clove garlic chopped
  • 1 small head of cabbage chopped
  • 2 cans diced tomatoes chopped
  • 8oz can tomato sauce
  • 1/2 cup water
  • 1 Tbsp cider vinegar or wine vinegar
  • 1 tsp sea salt
  • 1/2 tsp pepper
  • In Dutch oven: cook hamburger and onion in olive oil
  • Add garlic and cook 1 minute more
  • Add chopped cabbage, tomatoes, tomato sauce, water, vinegar, salt and pepper
  • Bring to a boil; cover and simmer for 20 to 30 minutes
